Our MILD SAUCE is a just what it says, a mild blend of spices that enhance the taste of any meat or vegetable. Use it as a side dressing or table dip for beef, pork, poultry, and fish. Put it on a tossed salad for a spark of flavor or as a seasoning on beans, potatoes, and many other vegetables. Just look at some of the recipes and you'll soon see how people are creatively using our sauces for a variety of tasty dishes. Humphrey's HOT SAUCE is for the adventurous palate, with a bit more bite in it, this sauce is rich in flavor and heat. Not a harsh, burning, tears in your eyes, rip your throat out sauce but a warm toasty addition to beef and pork especially. Use it as a marinade and glaze for the best grilled steaks you've ever had. Larry's BUTTERFLY PORKCHOPS (serves two) (2) 1/2" thick butterfly cut porkchops (1/4) cup Humphrey's Mild Sauce Salt, course ground black pepper, garlic powder, olive oil Trim away fat and cut diagonal slices about 1/4 deep into chops in a diamond pattern on each side, this lets the seasoning get deep inside and also speeds up the grilling time to prevent drying the meat. Marinate chops in Humphrey's sauce for 3-4 hours in refrigerator. Preheat grill to 500-550. Put olive oil in shallow dish large enough to dip the chops. Lay chops on grill, sear with flames, watch for *over charring from the dripping oil. Add pepper and garlic on uncooked side. Grill for about 4-5 minutes one side. Dip in olive oil again, and grill, sear other side. Add pepper and garlic. Grill 4-5 minutes, watch for over charring. Check for complete doneness before serving, may take an extra minute per side as some grills cook a little slower. Great meal to serve with baked or grilled potatoes and green beans. *You should only have an open flame on the meat for the first minute or less, this sears the meat and seals in the juices. If after a minute you still have flames you should move the meat to another area of the grill. |
